Sesame-Baked Orange Roughy |

Ingredients:
6 (6-ounce) orange roughy fillets |
2 tablespoons water |
1 teaspoon minced peeled fresh ginger |
1 garlic clove, minced |
1/2 teaspoon lemon juice |
1/2 teaspoon low-sodium soy sauce |
1/4 teaspoon crushed red pepper |
2 tablespoons sesame seeds, toasted |
cooking spray |
1/4 teaspoon paprika |
lemon wedges (optional) |
Directions:
1. Place fish in a heavy-duty zip-top plastic bag. Combine water and next 5 ingredients. Pour over fish. Seal bag, and turn to coat fish. Marinate in refrigerator 1 to 2 hours, turning once. 2. Preheat broiler. 3. Remove fish from marinade; discard marinade. Sprinkle both sides of each fillet with sesame seeds. Place fish on rack of a broiler pan coated with cooking spray. Broil 6 to 8 minutes or until fish flakes easily when tested with a fork. 4. Sprinkle fish evenly with paprika. Garnish with lemon wedges, if desired. |
