Seriously Homemade Corn Meal Waffles |

This amazing recipe is perfect for Sunday brunch. The little extra effort bring delight to extra airy and crispy waffles - you will forget you ever had Bisquick in your house...in fact people will not believe you made these from scratch! Read more ! This recipe has been in use for over 60 years in my family and has been served at many a brunch for friends and family who enjoy them so much they will miss them when they are not made! - Mind you we will still use Bisquick for oven fried chicken and dumplings -but frankly it's the only pre-made stuff in the house besides mayonnaise and ketchup normally! Ingredients:
3/4 cup flour |
3 teaspoons baking powder |
1 teaspoon salt |
2 tablespoons sugar |
1 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1 teaspoon vanilla extract |
1-1/2 cups corn meal (yellow preferred but white ok to use of course) |
2 extra large eggs - separated |
1-1/4 cups whole milk |
1/2 cup melted butter |

bowls, wooden spoon, sieve, waffle maker. |
Directions:
1. Sift flour and measure again. Yes please do this to ensure you have the exact amount of flour...even pre-sifted flour should be sifted... 2. OK, now that we got that out of the way.... 3. Measure flour once again and place into sieve one more last time (I promise) and add baking powder, salt, sugar, nutmeg and cinnamon. 4. Sieve one last time as promised into bowl. 5. Add cornmeal to flour mixture and stir with whisk or spoon till all is combined. 6. With egg whites separated, place them in mixer or by hand mixer or by hand if you think you got what it takes, beat egg whites until stiff but not dry, set aside momentarily. 7. Beat egg yolks and add whole milk and melted shortening (butter preferred) and vanilla extract. 8. Pour beaten egg yolks into flour mixture and stir to moisten the dry ingredients and incorporate the ingredients. 9. Fold in egg whites which have been beaten stiff gently into now wet mixture. 10. You are now ready to make your waffles. 11. Do yourself a favor and preheat that waffle iron - haven't used it in awhile? Then baste waffle irons lightly with butter or shortening. 12. Serve hot waffles with your favorite topping such as shaved maple sugar, butter, syrup, whipped cream ok You get the idea now... 13. Just eat while they are hot, will ya?!? |
