A simple and delicious potato dish perfect for potlucks and large crowds Ingredients:
10 yukon gold potatoes (31/2lb) 1.75kg |
2 onions, sliced |
1tsp herbes de provence or thyme |
salt and pepper |
1/4c butter |
1/4c flour |
21/2c hot chicken or vegetable stock |
1t cidar vinegar |
topping |
1/4c butter |
2c coarse fresh breadcrumbs |
1/4c chopped fresh parsley |
Directions:
1. Peel and thinly slice the potatoes to make about 8cups(2L) Spread half of the onions in the bottom of a greased 12c(3L) oval casserole dish. Top with half of the potatoes then sprinkle with half the herbs and some salt and pepper. Repeat layers. 2. In a saucepan melt butter and blend in flour. Whisk in stock slowly, cook, stirring for about 5mins. or until thickened; stir in vinegar. Pour over potatoes; Cover and bake in a 375F oven for 1hr and 15mins. or until tender. 3. TOPPING Melt butter, stir in breadcrumbs and parsley. Sprinkle over casserole. Broil for 2-3 mins until golden. |
