Semolina Cake With Sweet Wine Syrup |

Typical syrup cake of Mid-East. I also like to garnish with a dollop of whipped cream Ingredients:
2 cups flour |
3 1/2 teas baking powder |
1/4 teas salt |
6 separated eggs |
1 1/2 c sugar |
1 1/2 c melted butter |
1 grated orange rind |
1 c orange juice |
1 c semolina |
1/3 c blanched almonds |
syrup |
3 c sugar |
2 c water |
2 tabs sweet red wine |
Directions:
1. Sift flour, baking powder and salt. 2. Beat egg whites until firm. 3. Gradually beat in 1/2 cup of the sugar. 4. Continue beating until very stiff and glossy. 5. Set aside. 6. Beat egg yolks, remaining sugar, and butter . 7. Add orange rind. Add dry ingredients with orange juice and semolina. 8. Fold in whites. 9. Turn into greased pan and sprinkle with almonds. 10. Bake in moderate oven for 40 minutes. 11. Cool. 12. Boil sugar and water for 3 minutes. 13. Add wine. 14. Pour syrup over cake. 15. Cool and cut into your favorite shape. |
