SEMINOLE BACON HOMINY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jordan Estate in Mesquite, Texas in 1992. Ingredients:
8 strips bacon cut into small pieces |
2 pounds cooked hominy |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
3 scallions coarsely chopped |
Directions:
1. Fry bacon in large skillet until well browned and crisp. 2. Add hominy, salt and pepper and cook stirring continuously for 7 minutes. 3. Add scallions and continue cooking 5 minutes then serve immediately. |
