Real comfort food from my childhood. This recipe was passed to us from a friend of my mothers. You can use salmon or tuna for this casserole-like dish, or you can even make the filling from chicken. This dish tends to sink if left standing, but will keep longer than a souffle. Ingredients:
65 g butter |
1 cup water |
1 pinch salt |
1 cup plain flour |
3 eggs |
50 g cheddar cheese, cubed |
25 g butter |
1 small onion, finely chopped |
2 teaspoons curry powder |
2 tablespoons flour |
300 ml milk |
1 (250 g) can salmon or 1 (250 g) can tuna |
salt and pepper, for seasoning |
grated cheddar cheese |
Directions:
1. Place large spoonfuls of pastry around the edge of a greased oven proof dish. 2. Fill centre with filling and sprinkle with grated cheese. 3. Bake in hot oven (230°C) for 30 minutes or until golden brown. 4. To make filling, melt butter in saucepan and saute onion until softened. 5. Add curry powder and cook gently for a couple of minutes, stirring so it doesn't burn. 6. Remove from heat and stir in flour, then blend in milk. 7. Return to heat and stir until thickened. 8. Empty in the contents of the can of salmon and break up into sauce. 9. To make pastry heat water, butter and salt until butter has melted. 10. Dump in flour all at once and beat until mixture comes together in a ball. 11. Cool slightly then beat in eggs one at a time. 12. Finally mix in cheese that has been cut into small cubes. |
