I saw this on FoodTV's Calling All Cooks, which is now defunct. The recipe was created by Karen Edidin from Buffalo Grove, Illinois, who originally called it Mystery Meat Loaf. However, a quick Google search showed mystery meatloaves scare people. Don't let anyone watch you make this! You'll give away the secret ingredient too early. Ingredients:
3 lbs 80% lean ground beef (round) |
seasoning salt, to taste |
seasoned pepper, to taste (i use regular) |
garlic salt, to taste |
4 -6 large eggs, hard boiled and peeled |
1 (16 ounce) can tomato sauce |
1 tablespoon dried parsley |
1 cup rolled oats (optional) or 1 cup breadcrumbs, see note (optional) |
Directions:
1. Preheat oven to 350 degrees. 2. In a large bowl mix together ground round, seasoned salt and pepper and garlic salt to taste. 3. In the bottom of a 13 by 9-inch pyrex pan form 1/2 meat mixture into a free form/oval shape. 4. Place eggs end to end across meat lengthwise. 5. Arrange remaining 1/2 meat covering eggs. 6. With a fork, score meat all the way around. 7. Pour tomato sauce over top and around meat loaf. 8. Sprinkle with chopped parsley. 9. Bake for 1 1/2 hours, cut into slices and serve at table. Note: This recipe is all about presentation! You'll hear lots of, Wows! when the first halved egg appears. 10. Note: When I made this, I thought the texture was heavy and slightly rubbery. It might help to add in 1 cup of rolled oats or bread crumbs. This is up to you! I have never tried it. |
