Secretly Simple Zucchini Bread

My mother's recipe for moist and flavorful zucchni bread, which has now been passed down to me.
Ingredients:
2 eggs
1/2 cup vegetable oil
1 cup white sugar
1 cup grated zucchini
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/8 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)
1 ounce grated semisweet chocolate (optional)
Directions:
1. Preheat oven to 325 degrees F.
2. Grease and flour 1 8x4 inch loaf pan.
3. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Next, stir in zucchini and vanilla.
4. Combine flour, cinnamon, soda, baking powder, salt and; stir into the egg mixture. By hand, mix in nuts and grated chocolate if desired.
5. Pour batter into prepared pan.
6. Bake for 60 to 70 minutes, or until done.
