In a Korean market, ask for seaweed for soup. In a health food store, buy nori seaweed. Ingredients:
1 package dried seaweed (1 ounce is enough for 4 servings) |
6 cups vegetable broth |
2 teaspoons sesame oil |
naturally-brewed soy sauce or sea salt, to taste |
1 teaspoon garlic, minced |
Directions:
1. Soak the seaweed in water for 2 hours, or until soft. 2. Drain and rinse REALLY WELL, as dried seaweed can come with a lot of dirt, just like spinach. 3. Put all ingredients, including seaweed, into a large pot and bring to a boil, then simmer for 5 minutes to allow the flavors to meld. 4. Koreans traditionally enjoy this soup with a bowl of rice, white or brown - sometimes together in the same bowl. 5. This soup is an excellent blood cleanser, and is believed to support optimal brain function. |
