I found this recipe in Midwest Living. Ingredients:
1/2 cup butter |
1 1/4 cups sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1 teaspoon salt |
1 (15 ounce) can pumpkin |
1 egg |
1 teaspoon vanilla |
2 cups flour |
1 (10 ounce) package butterscotch chips |
Directions:
1. In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined. 2. Beat in the pumpkin, egg and vanilla. Beat in as much flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Stir in butterscotch pieces. 3. Drop by rounded teaspoons onto an ungreased cookie sheet. Bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned. Remove cookies and cool completely on a wire rack. 4. Makes 60 cookies. |
