A hearty and flavorful fish and vegetable dinner in a skillet. Land-O-Lakes Cookbook Ingredients:
1/4 cup butter (or margarine) |
6 small new potatoes, quartered |
3 celery ribs, diced 1inch pieces |
3 carrots, diced 1inch pieces |
1/2 teaspoon salt |
1/2 teaspoon dry mustard |
1/4 teaspoon pepper |
1 lb perch fillet, fresh (or frozen-thawed) |
1 medium tomato, cut into 1inch pieces |
Directions:
1. in 10 skillet melt butter until sizzling. 2. add remaining ingredients except fish and tomato. 3. cover, cook over med-high heat stirring occasionally until vegetables are browned and crispy tender. 4. reduce heat to med, place fish in same skillet, arranging vegetables on top of fish. 5. sprinkle with tomato. 6. cover cook until fish flakes with a fork. 7. Server. |
