Use a hearty, top-quality bakery bread for these gourmet lobster sandwiches. Double-smoked bacon is sliced to order in some delicatessens, like Scheffler's in Toronto’s St. Lawrence Market.
Ingredients:
3 oz double-smoked bacon, sliced paper thin
3 tbsp mayonnaise
2 tbsp dijon mustard
1 tsp lemon juice
6 slices good-quality whole-wheat bread, toasted
1/2 lb lobster tail and claw meat, thinly sliced
1 large heirloom tomato, thinly sliced
romaine lettuce
Directions:
1. Preheat broiler. Spread bacon out on a rack above a baking sheet.
2. Broil bacon 15 minutes or until crisp, turning halfway through cooking.
3. In small bowl, stir together mayonnaise, mustard and lemon juice.
4. Smear top surface of 2 slices of bread with Dijon mayonnaise.
5. Layer half of lobster meat, half of bacon slices and half of tomato slices on bread, dividing evenly.
6. Sprinkle with salt and pepper.
7. Top each with lettuce.
8. Repeat with remaining bread, mayonnaise, lobster, bacon and tomato.
9. Top with remaining slices of toast.
10. Slice each sandwich into 4 triangles, securing each section with toothpick. Serve.
