This recipe is adapted from an old Southern Living Magazine my mother had. We've made this dip numerous times over the years and have tweaked it a bit too. I just ran across this recipe again and thought.... Read more .hmmm, now with a microwave, I bet this would be even easier now. However, the recipe below is not adapted for the microwave...yet...but it shouldn't be too hard to figure out. It is delicious and we always doubled the recipe because it goes so fast. Enjoy!
Ingredients:
2 (6 1/2-ounce) can minced clams, undrained
2 (5-ounce) jars sharp process cheese spread, softened
1 (8-ounce) package cream cheese, softened
1/2 cup chopped red pepper
3 scallions with tops, chopped
1 tablespoon worcestershire sauce
optional: tabasco, to taste
Directions:
1. Drain clams, reserving 1/4 cup juice.
2. Combine cheese in top of double boiler; bring water to a boil.
3. Reduce heat to low; cook until cheese melts. Stir in remaining ingredients.
4. Cook over medium heat, stirring occasionally until dip is smooth and bubbly.
5. Serve warm with corn/tortilla chips or fresh vegetables.
6. Makes 3 cups.
