Cant remember where I got this recipe but have been making it forever. It an easy alternative to the caramel versions.
Ingredients:
2 cups pecans, divided
1/3 cup margarine or butter
1/3 cup light corn syrup
1 tsp. maple flavoring
1/2 tsp. salt
1 box (1 lb.) powdered sugar, sifted
corn syrup for brushing rolls
Directions:
1. Chop 3/4 cups nuts finely and 1-1/4 cups nuts coarsely. Set aside. Mix butter, corn syrup, flavoring and salt. Add sugar all at once and knead with hands until smooth. (It takes awhile so be patient!)Knead in the fine nuts. Divide dough into two. Roll each into 2 inch wide logs. Brush with corn syrup roll in coarse nuts. Wrap in wax paper, chill until firm. Slice into 1/4 inch pieces.
2. Makes 1-1/2 pounds
3. *Note This is what I do and it makes less of a mess. I divide the coarse nuts amongst two pieces of waxed paper. Place each log onto the nut covered wax paper. Brush log with corn syrup turning until most of the log is covered in the nuts . Then just roll up pressing the paper and nuts around the log. Less mess!
