From The Complete Southern Cookbook. Ingredients:
3 tablespoons vegetable oil |
1 large white onion, chopped |
1 green bell pepper, chopped |
2 garlic cloves, minced |
3 (15 ounce) cans black beans, rinsed and drained |
14 1/2 ounces stewed tomatoes, undrained and chopped (cajun-style if you can find them) |
1 1/2 cups water |
1 tablespoon red wine vinegar |
1 teaspoon sugar |
1 teaspoon black pepper |
1/2 teaspoon sea salt |
8 ounces tomato sauce |
6 cups hot cooked yellow rice |
1/2 cup chopped green onion |
sour cream |
Directions:
1. Place oil in a dutch oven over medium high heat. Saute onion, bell pepper, and garlic about 5 minutes, or until tender. Add thye beans, tomatoes, water, vinegar, suagr, pepper, salt, and tomatoe sauce. Stir to combine.Bring to a boil, cover, reduce heat to low, simmer 1 hour. Uncover and simmer 20 minutes, stirring occasionally. 2. Serve hot over yellow rice and toip each serving with green onions and sour cream. |
