Seashells' Crock Pot Meatball Stew |

One of my crock pot favorites. Ingredients:
1 lb lean ground beef |
1 1/2 teaspoons salt |
1/4 teaspoon pepper |
4 potatoes, cut in 1-inch cubes |
4 carrots, cut in chunks |
1 onion, cut in chunks |
1/2 cup catsup |
1/2 cup water |
1 1/2 tablespoons vinegar |
1/2 teaspoon dried basil |
Directions:
1. Preheat oven to 350°F. 2. Combine ground beef with 1 tbsp of salt and 1/4 tsp pepper and mix well. 3. Shape into 1-inch meatballs. 4. Bake in oven 15 minutes or until browned. 5. Place the potatoes, carrots and onion into the crock pot. 6. Top with meatballs. 7. Combine catsup with vinegar, basil and remaining salt and pepper to taste. 8. Pour over meatballs. 9. Cover and cook on low 4 to 5 hours or till veggies are done. |
