Seared Tuna With Soba Noodles |

Lightly seared tuna with a great soy glaze from the Bayside Restaurant, Newport Beach. Ingredients:
1 1/4 lbs searing grade tuna steaks |
4 tablespoons sesame oil, divided |
12 ounces soba noodles |
1/2 red bell pepper, sliced thin |
1/2 yellow bell pepper, sliced thin |
4 scallions, chopped |
1 avocado |
salt and pepper |
1 cup soy sauce |
1 cup light brown sugar |
2 teaspoons fresh ginger |
2 teaspoons orange zest |
2 teaspoons star anise |
Directions:
1. Heat a non stick frying pan over high heat. 2. As the pan is warming, using 1 tablespoon of oil, rub the tuna steaks on all sides. Set aside. 3. Prepare the soba noodles according to instructions usually boiling for 5 minutes when done drain noodles and run under cold water. 4. Combine all the soy glaze ingredients in a large bowl, add remaining 3 tbspof sesame oil and whisk to combine. 5. Divide noodles among 4 bowels, sprinklethe sweet peppers and scallionsatop the noodles. 6. Pour the glaze over the noodles. Thinly slice the tuna and divide among the 4 bowels. |
