Seared Scallops With Miso Sauce |

Just giving an version to seared scallops which my friends loves especially with beer. Ingredients:
2 tbsp olive oil/ peanut oil |
10 pcs japanese scallops |
1 pod vanilla bean |
salt and pepper to taste |
for miso sauce |
1 tbsp good quality japanese miso |
2 tsp dashi powder dissolved in 1/2 cup water |
1 tbsp sake or rice wine |
2 tsp sugar |
1 tsp lemon juice |
1 clove garlic, halves |
salt and pepper to taste |
benishoga for garnish |
Directions:
1. Combine vanilla bean with salt and pepper. Season scallops with vanilla mixture. Set aside. 2. Rub bottom and side of pan with halved garlic. Discard garlic. Bring dashi mixture to boil, add in miso, wine, sugar, and lemon juice. Simmer stirring. When the liquid has been reduced to half its volume, it’s done. Correct seasoning. 3. In a skillet with oil in its smoking point, sear scallops until brown about 1-2 minutes on its side. Lightly press scallops to have an even brown crust. 4. Serve with miso sauce and put Benishoga on top. |
