Seared Green Beans, Water Chestnuts, Shallots and Soy Glaze |

This is a easy quick and just really good dish. A quick pan glaze takes just minutes and makes this a wonderful side dish with grilled fish, shellfish or even chicken. Ingredients:
1 lb green beans, ends trimmed and cut in half on an angle |
1 (1/2 cup) can water chestnut |
1/2 cup shallot (approximately 2 diced fine) |
1/2 cup roasted red pepper |
1 tablespoon soy sauce |
1 teaspoon honey |
1/2 cup chicken broth |
1 teaspoon kosher salt |
1/2 teaspoon ground black pepper |
1 teaspoon sesame seeds, toasted |
1 teaspoon olive oil |
Directions:
1. Step 1. 2. Dry pan toast the sesame seeds to lightly brown. Just 1-2 minutes in a dry pan and lightly toast. Remove and then set to the side to cool. 3. Step 2. 4. Now in a medium saute pan, add the olive oil and heat to medium. Add the shallots and cook 2-3 minutes until slightly soft. Add the water chestnuts, red peppers, soy, honey, broth and seasoning. Add the beans and cover. Cook on medium low for 5-8 minutes until the beans are soft but still have a little texture to them. Remove the cover and let the sauce reduce 2 minutes. Remove to a serving bowl and top with the sesame seeds and serve. 5. A perfect side dish. |
