Delicious and elegant. This makes a perfect (quick) romantic dinner for 2. It's actually easy and healthy. I just made up this recipe using some of my favorite things. I've made this with scallops and another time I made it with shrimp, we really liked it either way. I think it might be wonderful with crab. I have wrapped my scallops in procuitto with delicious results, of course with added calories! Recipe is easily doubled. Ingredients:
12 large shrimp, raw, peeled with tail on or 8 large fresh scallops |
1 garlic clove, minced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 lemon, juiced |
3 tablespoons butter |
1 teaspoon green onions or 1 teaspoon parsley, chopped |
1 (16 ounce) package fresh spinach, washed and stems removed |
1 cup orzo pasta, cooked according to directions |
1/2 lemon, wedged |
Directions:
1. Saute the fresh spinach in a non-stick medium skillet in 1 T. butter and a little salt and pepper - dont' over cook, it cooks very quickly and I only cook it for a minute or so. Then put the spinach on top of the precooked, warm orzo (follow the box instructions)- place it on an attractive serving plate. Then - 2. Saute shrimp (or scallops) in 2 T. butter and the garlic and lemon juice. Cook for 5-6 minutes, don't overcook. Top the spinach/orzo with the seafood - sprinkle with the green onion if desired - serve with lemon wedges. Best served immediately. |
