a twist on a family favorite Ingredients:
1/2 lb capellini (any noodle will do well) or 1/2 lb spaghetti, uncooked (any noodle will do well) |
1/2 cup tuscan house italian dressing |
1 onion, finely chopped |
2 garlic cloves, minced |
12 shrimp, tails removed |
12 large scallops, cut into quarters |
grape tomatoes, 3 cups cut in half |
1 cup mozzarella cheese |
1 cup fresh basil, finely chopped |
salt and pepper (optional) |
Directions:
1. Cook pasta as directed on package. 2. Heat dressing in a large skillet on medium high heat. Add onions and garlic; cook and stir two minutes. Add shrimp and scallops, cook two more minutes. Add tomatoes, cook three minutes or until heated completely, stirring occasionally. 3. Drain pasta. Add tomato mixture and mix. 4. Sprinkle with cheese and basil. Add salt and pepper if desired. 5. Serves 4, 1 1/2 cups each. |
