Lovely seafood dish. Nice for special occasion. This is from Clay Hill Farms in Ogunquit,Maine. Ingredients:
4 oz. cooked lobster meat |
8 lg. shrimp,peeled and deveined |
10 scallops |
1/2 lb. lemon pepper linguine |
2tbs. olive oil |
11/2c. white wine |
1/2 lemon,juice of |
2 tbs fresh parsley |
1 clove garlic |
1/4c. salted butter |
Directions:
1. Boil water for pasta,add pasta ,stir occasionally. Heat olive oil in lg. saute pan,add shrimp and scallops. Stir to coat seafood with oil. Cook 1-2 minutes till shrimp turn pink. Add white wine and bring to a simmer. Let simmer till liquid reduces a little. Add lemon juice,chopped parsley,garlic and lobster meat. Turn heat off and add butter to pan. Let it melt into the sauce as you swirl the pan. Drain pasta,add to saute pan and toss. Serve immediately. |
