A great way to use leftover seafood! Recipe source: supermarket flyer Ingredients:
3 -4 cups angel hair pasta (or your favorite pasta) |
8 ounces cooked seafood (fish or shellfish or mix it up) |
1 tablespoon olive oil |
3 tomatoes, seeded and chopped |
2 garlic cloves, minced |
2 tablespoons parsley, chopped |
2 tablespoons basil, chopped |
2 tablespoons lemon juice |
1/2 teaspoon sugar |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup parmesan cheese, shredded |
Directions:
1. Cook pasta according to package directions, drain and set aside. 2. While pasta is cooking, heat oil in skillet over low heat. Add next 8 ingredients (tomatoes - pepper), cook stirring until heated. 3. Stir in cooked seafood (which has been seared or sauted or it isn't stone cold). 4. Spoon sauce over pasta and sprinkle with cheese. |
