In 'Quesadillas' by Donna Kelly Ingredients:
1 lb assorted shelled raw seafood (such as crab, shrimp, and scallops) |
2 tablespoons butter |
6 ounces fontina cheese, grated |
2 ounces gruyere cheese, grated |
2 teaspoons old bay seasoning |
8 (10 inch) flour tortillas (white, wheat) |
1 cup diced fresh parsley |
Directions:
1. Saute seafood in butter in a skillet over med-high heat until opaque and cooked through. 2. Toss cheeses and seasoning together in a bowl. 3. Lay 4 tortillas on the counter and spread about 1/3 cup cheese over each. 4. Sprinkle about 1/2 cup seafood and a little parsley over cheese. 5. Sprinkle another 1/3 cup cheese over top. 6. Slide one of the cheese-covered tortillas into a 10-inch skillet over medium heat. 7. Place one of the remaining tortillas on top. 8. Press down with a wide spatula to remove any air pockets. 9. Cover and cook 1-2 minutes, checking frequently, until bottom tortilla is crisp and browned. 10. Turn over, cover, and cook 1-2 minutes more, or until lightly browned. 11. Repeat this process for remaining quesadillas. 12. Cut into wedges and serve immediately. |
