This is a low cal, low fat soup and it's HOT, HOT, HOT Ingredients:
1 pound fresh fish, any firm mild type, cut into medium pieces |
salt |
ground black pepper |
1 tablespoon vegetable oil |
1 small onion, finely chopped |
2 to 4 habanero peppers, seeded and chopped fine (see note) |
2 to 3 cups beef or chicken stock |
1/8 teaspoon dried thyme |
1 dash ground ginger |
1 dash garlic powder |
1 dash ground cloves |
1/8 teaspoon ground red pepper (cayenne) |
1/2 pound fresh prawns or jumbo shrimp, peeled, cleaned and deveined |
Directions:
1. Sprinkle fish lightly with salt and black pepper 2. Heat oil in a medium stock pot 3. Add fish and cook for 3 minutes on each side 4. Carefully remove fish from pot and set aside 5. Add chopped onion and habanero peppers to the pot 6. Cook, stirring frequently, for 3 minutes 7. Add stock, thyme, garlic,ginger, cloves and cayenne 8. Bring to a boil, then reduce heat and simmer 20 minutes 9. Add fish and prawns and cook 10 minutes 10. Serve immediately 11. NOTE: 12. Be sure to wear gloves when working with these extremely hot peppers. For milder flavor, use half of a pepper. Four peppers produces an extremely hot broth |
