Seafood Chowder - low fat version Ingredients:
2 cups skim milk |
8 oz cream cheese fat free |
2 cloves garlic |
20 oz 98% fat free cream of mushroom soup |
10 oz cream of shrimp soup |
1 cup green onions |
1 cup carrots |
1 1/2 cups potatoes |
1 tbls parsley |
1/2 tsp pepper |
1/2 tsp cayenne pepper |
1 lb shrimp |
1 lb scallops |
5 oz crab meat |
Directions:
1. Place 1/2 cup milk, cream cheese, and garlic in a large pot over low heat. Cook and stir until blended. 2. Mix in canned soups, green onions, carrots, potatoes, parsley, and remaining milk. Season with black pepper and cayenne pepper. 3. Simmer 25 minutes. Do not boil. 4. Mix the shrimp, scallops, and crabmeat. Continue cooking 10 minutes, or until seafood is opaque. |
