A creamy soup that is really satifying Ingredients:
2 cups diced potatoes |
1 cup diced carrots |
1/2 cup chopped onions |
2 cups water |
2 cans evaporated milk |
1 cup frozen peas |
1 can clams; drained |
1 cup cooked shrimp |
1 cup chopped cooked crab |
1/2 tsp salt |
1/8 tsp pepper |
1/2 cup finely chopped chives |
paprika |
1 cup seasoned croutons |
Directions:
1. Place potatoes, carrots and onions in a large saucepan. 2. Add water and bring to a boil. 3. Reduce heat and simmer, uncovered for 10-12 minutes or until tender. 4. Add milk and peas. 5. Simmer 4-5 minutes. 6. Add clams, shrimp and crab. 7. Simmer for another 2-3 minutes or until heated through. 8. Season with salt and pepper to taste. 9. Serve garnished with chives and croutons. |
