Just good, comforting seafood. With crabmeat fresh from the Chesapeake Bay, this couldn't be better or easier. Ingredients:
1 cup chopped sweet onion |
1/2 cup diced carrots |
1 clove garlic, minced |
1 tablespoon oil |
21/2 cups chicken broth |
11/2 pounds new potatoes, diced |
11/2 cups fresh sweet corn kernels |
11/2 cups heavy cream |
1 pound crabmeat |
1 pound medium shrimp, shelled |
1 teaspoon old bay seafood seasoning |
2 teaspoons kosher salt |
1 tablespoon chopped fresh parsley, if desired |
Directions:
1. Saute onion and carrot in oil over medium heat for 3 minutes, then add garlic and continue to cook 2 more minutes. 2. Stir in chicken broth, then add potatoes and corn, simmering for 15 minutes. 3. Add seafood seasoning and salt, then stir in cream. Heat through at a low simmer about 5 min. 4. Add crab and shrimp. Simmer about 5 minutes. 5. Sprinkle with parsley, if desired. |
