Seafood and Saffron in Orzo |

Seafood/Saffron Ingredients:
1/2 lb orzo |
3 tablespoon olive oil |
1 cup onions, diced |
3 cloves garlic, minced |
1 tablespoon saffron |
1 lb albacore |
1/2 lb shrimp |
1/4 lb scallops |
1 lb crab |
1/2 cup parsley, fresh, chopped |
1/4 cup white wine |
1/2 cup red bell pepper |
1/2 cup white mushrooms |
Directions:
1. place saffron strands in warm water and soak 2. prepare orzo very al dente 3. pre-heat oven to 400 4. pre-heat pan, add olive oil, garlic and onions, saute until translucent 5. drain orzo and place in oven-safe pan 6. mix in parsley 7. arrange cubed albacore steaks, shrimp and crab on top of orzo 8. roast until begins to brown |
