I clipped this recipe from a magazine in the early 80's. It has been a family favorite ever since. Ingredients:
3 quarts hot tap water |
8 ounces uncooked rotini pasta |
1 medium cucumber, peeled and chopped fine |
1/3 cup mayonnaise |
2 tablespoons lemon juice |
1 teaspoon dried dill |
1/4 teaspoon minced garlic |
12 ounces imitation crabmeat |
8 ounces fresh snow peas, trimmed and cut crosswise in halves |
Directions:
1. Bring water to boil in a large pot. 2. Add pasta to boiling water and cook uncovered for 8 minutes or until tender but still firm. 3. Mix cucumber,mayo, lemon juice, dillweed and garlic in a large bowl. Add the seafood. 4. Thirty seconds before draining pasta, add snow peas. 5. Pour pasta and snow peas into colander; plunge colander in very cold water to chill contents. Drain Well. Add to dressing and stir to coat. 6. I like to refrigerate for a couple of hours to blend flavors. Tastes geat the second day too. |
