This recipe is taken from Dinner in the Diner . Ingredients:
1 cup flour, sifted |
1 cup cornmeal, water ground |
3 teaspoons baking powder |
1/2 teaspoon salt |
3 tablespoons sugar |
1 egg, well beaten |
1 cup milk |
3 tablespoons butter, melted |
Directions:
1. Mix and sift the dry ingredients. 2. Combine the milk, melted butter, and beaten egg and add them to the dry ingredients. Grease a muffin pan and add batter to this, filling each muffin form about 2/3 full. Preheat your oven to 400 F, then place the muffin pan in the oven and bake for 20-30 minutes, or until done. |
