I had lots of great ingredients to use in making my lunch for the week. Left over roasted grape tomatoes and Cajun shrimp. Decided to make a fun egg salad using those ingredients with enough to share with my darling Father-in-Law. Read more . He absolutely loves egg salads and the Cajun shrimp makes this one Sea-Sational. Ingredients:
6 large hard-boiled egg |
14 shrimp, large cooked |
12 grape tomato usda |
8 stalk fresh green onions |
2 small stalk (5 -7 long) |
12 large california ripe olives (black) |
1/4 cup cilantro |
1 tbsp sweet relish |
1 tbsp traditional pub style mustard |
4 tbsp light mayonnaise |
Directions:
1. Mix well the lime juice, mayonnaise, relish and pub mustard. Halve the grape tomatoes and stir them into the dressing. 2. Dice the hard boiled eggs, green onions and celery. Slice the shrimp and black olives. Macerate the cilantro. Toss all of those together. 3. Fold in the dressing then let chill before serving.
