Tomato based chowder, acceptable for fasting Ingredients:
3 cups dried beans or 3 cups canned beans |
2 cups onions, chopped |
6 garlic cloves, minced |
1 (32 ounce) container clamato juice |
1 cup white wine or 1 cup sherry wine |
1 bay leaf |
1/2 teaspoon thyme |
2 tablespoons parsley, chopped or 2 teaspoons dried parsley |
1/4 cup fennel, chopped or 1/2 teaspoon crushed fennel seed |
salt & pepper |
1 (16 ounce) jar salsa, chunky style |
1 (10 ounce) jar baby clams, whole |
1 lb shrimp, briefly cooked and shelled |
Directions:
1. Cook dried beans. 2. Saute onion in oil. 3. Add Clamato juice, wine and all seasonings. 4. Simmer Simmer for a long time. 5. Add beans. 6. 15 minutes before serving add shrim and undrained clams. |
