Simple and elegant! Ingredients:
12 ounces sea bass fillets |
1/4 cup pesto sauce |
salt, to taste |
pepper, to taste |
2 medium squash |
1 medium zucchini |
1 cup brown rice, cooked |
Directions:
1. Preheat oven to 425. 2. Sprinkle fish with salt and pepper and coat with a little pesto. 3. Bake approximately 14 minutes until done. 4. Meanwhile, saute squash and zuccini. 5. Toss with 1 - 2 tbsp pesto. 6. Serve fish over a few spoonfuls of pesto with rice on one side and veggies on the other. |
