SCRUMPTIOUS ZUCCHINI SAUTÉ DATED 1962 This recipe came my from my Aunt Minnie's collection that I inherited when I inherited the family collection in 1980.
Ingredients:
2 tablespoons cold pressed olive oil
1 pound zucchini shredded
1 large tomato coarsely chopped
3 small green onions coarsely chopped
2 large cloves garlic minced
1 tablespoon coarsely chopped fresh basil
1/4 teaspoon thyme
1/2 teaspoon salt
Directions:
1. Heat oil in a large non stick skillet then add garlic and sauté 3 minutes until tender. 2. Add all other ingredients and sauté stirring frequently until cooked but not overdone.
