Scrumptious Whole Wheat Crepes |

WOWZERS! These are GREAT! Try my strawberry low-fat crepe filling for an all-time winner! Ingredients:
1/3 cup whole wheat flour |
1/3 cup all-purpose flour |
2/3 cup low-fat milk |
1 tablespoon reduced-calorie maple syrup |
2 teaspoons margarine, melted |
1 teaspoon vanilla |
1/8 teaspoon ground nutmeg |
1/8 teaspoon ground ginger |
3 egg whites |
Directions:
1. Place all ingredients in blender or food processor. 2. Cover and blend until smooth. 3. Spray 6-inch nonstick skillet w/ nonstick cooking spray. 4. Heat skillet over medium heat. 5. For each crepe, pour 2 T. 6. batter into skillet. 7. IMMEDIATELY rotate skillet until think film covers bottom. 8. Cook 45 seconds to 1 minute or until batter is set. 9. Run wide spatula around edge to loosen; turn and cook other side about 30 seconds or until light brown. 10. Stack crepes, placing wax paper between each; keep covered. 11. Repeat with remaining batter to make 12 crepes. |
