Scrumptious Summer Corn Salad |

A nice change from the usual salad, potatoe salad, coleslaw, etc. Puts a zing on the taste buds. Ingredients:
2 cans mexican corn |
1 ripe but not over ripe avocado cut into bite size pieces |
1/2 red onion chopped as desired |
1 or 2 carrots chopped as desired |
caesar dressing |
Directions:
1. Drain corn well. Place in bowl 2. Add Avocado, onion, and carrots 3. Coat well with dressing, more or less as desired 4. Cover and let stand in fridge for at least an hour 5. Serve with all your summer meals 6. Hint: For every 2 cans of Mexican Corn use 1 Avocado |
