Scrumptious Chocolate Brownie Waffles |

Wonderful dessert! Serve hot or cold with ice cream and sundae toppings (syrups, nuts, etc.). I've subsituted chopped mints and chocolate chips for the nuts from time to time to give it a different taste. Ingredients:
1/4 cup oil |
2/3 cup sugar |
3 egg yolks |
1 1/2 cups flour |
1 tablespoon baking powder |
1/4 teaspoon salt |
1 1/4 cups milk |
1/2 teaspoon vanilla |
3 egg whites, stiffly beaten |
1 ounce baking chocolate, melted (about 2 squares) |
1/2 cup chopped nuts (optional) |
Directions:
1. Preheat waffle maker. 2. In a large bowl, cream shortening and sugar at medium-low speed until fluffy. 3. Add melted chocolate and egg yolks and beat well. 4. Add milk alternatively with combinded dry ingredients and mix well. 5. Add vanilla (and optional nuts). 6. Gently fold in beaten egg whites by hand. 7. Cook for 3-5 minutes in your waffle maker. 8. Waffle will become crisp as it cools. |
