Scrumptious Cheesy-Veggie-Bacon Potatoes

Ready, Set, Cook! Special Edition Contest Entry: This is a family tradition at all special events - a real crowd pleaser! Sometimes you just need a scrumptious dish that feeds the palate and heart - regardless of the fat content. It's not a daily dish, but one everyone expectantly awaits as they come to the family get together. Very little preparation is needed yet it always brings a smile to the face of everyone.
Ingredients:
2 (20 ounce) packages simply potatoes diced potatoes with onion
5 ounces bacon, cooked and chopped
2 cups shredded carrots
1/4 cup green onion, diced
2 cups red bell peppers, diced
1 tablespoon oil
16 ounces sour cream
1 (15 ounce) can cream of mushroom soup
2 cups shredded sharp cheddar cheese
1 teaspoon salt
1 teaspoon pepper
1 cup melted butter (3/4 cup and 1/4 cup used in recipe)
2 cups corn flakes, crushed
Directions:
1. Pour both bags of Simply Potatoes into a large mixing bowl. Brown the bacon until cooked and crisp, chop and set aside. Briefly saute the green onions, red bell pepper, and carrots in the 1 Tbs of oil. Add the bacon, green onions, red bell pepper, and carrots to the potatoes. Add the salt and pepper to the potato mix and stir completely together. Then add the sour cream, shredded cheese, and mushroom soup to the potato mixture and stir together. Finally, add 3/4 cup melted butter and completely mix all ingredients thoroughly.
2. In a 10 x 15 inch pan, spoon the potato mixture in and even it out. In a separate bowl, add the crushed cornflakes and 1/4 cup melted butter and mix thoroughly. Layer the cornflake/butter mixture on top of the potato mixture.
3. Bake 1 hour at 350 degrees and serve immediately! Enjoy!
