A great way to start the day, hidden veggies! :) Ingredients:
4 eggs |
1/4 cup onion, chopped |
1/4 cup mushroom, chopped |
1/8 cup bell pepper, chopped |
1/8 cup tomato, chopped |
2 tablespoons milk |
1 tablespoon water |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon garlic powder |
1 teaspoon fresh parsley |
1 1/2 teaspoons margarine or 1 1/2 teaspoons butter |
Directions:
1. saute mushrooms, onions, and peppers in margarine until almost done, add tomatoes and cook for 1 minute. 2. Mix remaining ingredients together and pour in pan with sauteed veggies. 3. Cook on medium heat until no longer runny. 4. Serve with toast and fruit for a delicious start to your day. |
