Scrambled Veggie Omelet

A great way to start the day, hidden veggies! :)
Ingredients:
4 eggs
1/4 cup onion, chopped
1/4 cup mushroom, chopped
1/8 cup bell pepper, chopped
1/8 cup tomato, chopped
2 tablespoons milk
1 tablespoon water
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1 teaspoon fresh parsley
1 1/2 teaspoons margarine or 1 1/2 teaspoons butter
Directions:
1. saute mushrooms, onions, and peppers in margarine until almost done, add tomatoes and cook for 1 minute.
2. Mix remaining ingredients together and pour in pan with sauteed veggies.
3. Cook on medium heat until no longer runny.
4. Serve with toast and fruit for a delicious start to your day.
