Great dish for breakfast ot anytime. We often have it for dinner with toast, just like scrambled eggs! Ingredients:
1 tbs oil |
1 tbs butter |
1/2 tsp turmeric for color (optional) |
1 block firm or extra firm tofu, crumbled into med/lg size chunks |
salt and pepper to taste |
optional additions |
sauteed onions |
chopped vegetarian hot dog pieces |
most other things you'd like in an omelet or scrambled egg dish |
you can even add a cage free egg or two if you'd like it more eggy and you're vegetarian, not vegan |
Directions:
1. Heat oil and butter in a skillet over medium heat. 2. Add rest of ingredients, stir well. 3. Season to taste. 4. Cook 5-6 mins or til eggs if you add them are cooked through. 5. Delicious served with toast or accompanying any breakfast fare. 6. Great for a really quick dinner! |
