This is part of the Vegetarian Low-Carb Diet by Rose Elliott Good for Phases 1, 2 and 3 This is good served on a big mushroom or on Low-Carb toast. Ingredients:
1 tablespoon olive oil |
1 ounce butter |
5 ounces firm tofu |
1/2 teaspoon turmeric powder |
2 teaspoons cream or 2 teaspoons soya cream |
1 pinch salt and pepper, to taste |
Directions:
1. Heat the olive oil and butter in a sauce pan over moderate heat. 2. Add the tofu, turmeric, cream and salt and pepper to taste. Stir over a gentle heat until the tofu is hot and looks like scrambled egg. 3. If you like a runnier scramble, add a little unsweetened soya milk until you get the right consistency. |
