Scrambled New York Breakfast Wrap (South Beach Diet P2)

Ingredients:
1 tablespoon extra virgin olive oil
1 medium onion, thinly sliced
1 pinch salt
1 pinch fresh ground pepper
6 large eggs, lightly beaten
2 ounces smoked salmon
2 ounces reduced-fat cream cheese
4 small whole wheat tortillas, 6 in
Directions:
1. In a large nonstick skillet, heat 1 T oil over medium heat. Add onions and salt and pepper; cook , stirring occasionally, until just soft, about 5 minutes.
2. Add eggs and allow to set for about 10 seconds. Sprinkle with salmon and cream cheese cut into small pieced. Scramble with eggs until cooked through, about 1 minute.
3. Divide scramble among tortillas. Roll up burrito style and serve hot.
