Scrambled Eggs With Feta And Tomato |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thiese Estate in McKinney, Texas in 1991. Ingredients:
1 tablespoon butter |
12 eggs beaten |
3 tomatoes seeded and chopped |
6 ounces crumbled feta cheese |
1 teaspoon chopped fresh oregano |
1/4 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Heat olive oil in a large skillet over moderate heat and pour in the eggs. 2. When eggs are partially set stir in remaining ingredients. 3. Continue cooking stirring constantly until set to your preference. |
