Scrambled Eggs with Cheese

eggs, lowfat milk, pepper, margarine or butter cvt
Ingredients:
2 eggs
2 t lowfat milk or cream
1 dash pepper
1/8 tsp salt (optional)
1 1/2 tsp margarine or butter
2 t shredded cheddar cheese or monterey jack cheese or swiss cheese
Directions:
1. Stir eggs, milk and pepper with fork, thoroughly for a uniform color, or slightly for streaks.
2. Heat margarine or butter over medium heat until a drop of water sizzles, then pour in egg mixture.
3. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so uncooked mixture can flow to the bottom. Avoid constant stirring. Cook until eggs are thickened throughout but still moist, about 3 to 5 minutes.
