This is my favorite way to eat eggs. Lots of fresh sauteed onions and sweet butter on top of pan grilled toast! What a way to begin a day! Ingredients:
3 large eggs |
1/3 cup half and half or heavy cream |
1 large onion, sliced |
2 slices butter bread or potato bread |
6 tablespoons salted butter, divided |
salt and pepper to taste |
Directions:
1. Heat 1 tablespoon butter in skillet or frying pan. 2. Brown bread in butter over med. low heat until bread is lightly toasted on each side. 3. Repeat with second slice of bread. 4. Place one slice of bread on each plate.(2 plates) 5. Whisk eggs with cream until fluffy. 6. Season with salt and pepper. 7. Sautee onions in 2 tablespoons of the butter until tender. 8. Divide and Spoon evenly on top of the toast 9. Heat remaining butter(2 tablespoons)in skillet. 10. Scramble eggs in butter over low medium until fluffy and cooked.(about 1 to 2 minutes-do not overcook eggs) 11. Spoon eggs evenly over the top of the bread and onions. 12. Serve |
