Scott's Finger Lickin Good Lasagna |

High protein lasagna with whole wheat noodles. Ingredients:
1 tablespoon olive oil |
1 tablespoon minced garlic |
2 cups chopped onions |
1 cup chopped celery |
1 1/2 cups green peppers |
2 lbs ground turkey |
1 (15 ounce) can tomato paste |
1 (14 1/2 ounce) can chopped tomatoes |
4 teaspoons oregano |
2 teaspoons basil |
1/2 teaspoon salt |
6 whole wheat lasagna noodles |
2 cups 1% cottage cheese |
2 cups reduced-fat mozzarella cheese |
Directions:
1. Heat the oil in a large skillet and saute the garlic, onion, celery, bell pepper, and turkey. 2. Once the turkey is browned, drain off any fat/liquids. 3. Add the tomato paste, tomatoes, and seasonings and allow to simmer. 4. Heat the oven to 350 degrees F. 5. In a rectangular baking dish sprayed with nonstick cooking spray, make a layer of noodles, cottage cheese, sauce, and mozzarella cheese 6. Repeat to make two layers (one cup of mozzarella cheese over each layer). 7. Bake for 45 minutes. |
