From The Centennial Cookbook of the Daughters of Scotland. Ingredients:
1/4 cup dripping |
1 large onion, peeled and finely chopped |
2/3 cup old-fashioned oatmeal |
salt and pepper |
mashed potatoes |
Directions:
1. Melt the drippings. Add onion and fry slowly, stirring occasionally until evenly brown. Stir in enough oatmeal to absorb the fat. Add seasoning and cook for about 10-15 minutes until throughly cooked. 2. Serve with mashed potatoes. Uncooked, it can be used as a stuffing for chicken. |
