A nice crock-pot roast beef recipe, courtesy of my friend Vicki Scott. Ingredients:
3 lbs pot roast (chuck roast) |
2 large white onions, sliced |
2 lbs carrots, peeled & cut |
8 medium potatoes, peeled & cut |
1 (10 ounce) can cream of onion soup |
1 (1 1/4 ounce) package onion soup mix |
1 cup red wine |
1 cup water |
Directions:
1. Rinse meat, arrange in rectangular baking dish or in crock pot. 2. Arrange carrots, potatoes and onions around meat. 3. Whisk all liquids and soup mix together, pour over meat and veg. 4. Bake 4 hours 350°F in oven (cover with foil) or in crock pot for 8 hours on low, or until fork-tender. |
