Real good wholesome muffins to enjoy while on the Canal. Ingredients:
1 1/2 cups sifted flour |
2 1/4 teaspoons baking powder |
3/4 teaspoon salt |
2 tablespoons sugar |
3/4 cup cornmeal |
2 eggs, well beaten |
1 cup milk |
1/4 cup melted butter |
Directions:
1. Sift flour then measure; add baking powder, salt and sugar, then sift again. 2. Add cornmeal and mix well. 3. Combine eggs, milk, and melted butter; add to the flour mixture, blending just until ingredients are moist. 4. Bake in greased muffin cups at 425° for about 25 minutes. 5. Makes about 12 corn muffins. |
